This also came from the Cheese making podcast It was originally a recipe I found on the web and well worth sharing here: INFO COMMENTS Ham and blue cheese croquettes 100g ham 75g butter 75g plain flour, plus extra, seasoned with salt and pepper, to coat 300ml milk 150g blue cheese, crumbled 2 eggs About 125g white breadcrumbs Cook the finely cut ham in Olive oil for 5 mins until crisp Melt the butter into a heavy pan and add the flour, stirring all the time with a balloon whisk. Heat the milk until quite hot and slowly stir over the roux. Cook the flour for 2 minutes on a regular heat then add the ham and the cheese, mixing well. The cheese should be crumbled. Let the mixture cool, covered with cling film to avoid making a crust. When cold, you can make balls about 4 cm in diameter, or quenelles with a couple of teaspoons and chill ini the freezer. Have 3 bowls: Flour, egg and breadcrumbs. Coat the balls first in the flour, then the beaten egg then the breadcrumbs. Deep fry for about 2 - 3 minutes until gooey inside and serve straight away.
