Meatloaf Stir Fry


Meatloaf Stirfry This is an imaginative way to use some pork mince. You can do so many things with mince! Long live mince! Start by toasting 2 heaped tablespoons of sesame seeds, when darker brown from golden, remove from the heat. 500 g pork mince into a bowl and sprinkle over with the sesame seeds Add 1 level teaspoon of 5 Spice powder, 1 garlic clove, finely grated, 1/4 teaspoon of salt Massage the spices into the meat for a few minutes. Preheat the oven to 180ºC, 350ºF, Gas 4 Grease and line a loaf tin with baking paper. you place the meat in the tin and then wrap the whole loaf with the paper. Bake for 40 - 45 minutes. It is baked when it shrinks from the side, you can also test with a thermometer - it should be at least 75ºC Place another tin on the top of the meat to press with some weights in it. You don’t want to over press, just press for about 30 minutes. For the stirfry: A large green and a large red bell pepper 1 large red onion Cut the whole into strips 2 chopped garlic cloves Some oil for frying (with sesame oil if you have it) Fry your vegetables quite quickly then add: 4 - 5 tablespoons of sweet chili sauce mixed with a little honey. Pour half over the veg at first. Cut the meatloaf into thin strips and add to the vegetables. Then add the rest of the sauce. Serve with noodles or rice.
