Throughout this conversation, Mike was drinking a Red Stripe while I enjoyed Silo - Brasserie Montréal 's "Lagerbier". This Franconian Lager was brewed with a very special yeast from the north of Bavaria called Tum-35. It is actually the first beer in Québec to use this classic rediscovered yeast.
