Any cheese is usable, but strong Cheddar is our favourite. 300 g self raising flour Level tsp mustard powder Level tsp salt 120 g grated cheese 200 ml ordinary milk with 2 tsp lemon juice 1 tsp sunflower oil Black pepper Sift all the powdered ingrdients Stir in the cheese Make a well and add the milk Mix with a fork to a dough Don’t handle too much, you want this as light as possible Transfer to a greased baking sheet, sprinkle with cheese Bake at 200 C for 20 minutes
